Speaking with a chocolatier



“How long have you been doing this for?” I asked her.  

“I’ve been working here for eight months.  I went to culinary school years ago, though.” She said

She scraped liquid chocolate over a black and white marble counter.  The smooth hazel colored cream looked thick as it rolled around the hard stone.  She kept her eyes down, watching her work as we spoke. 

“I was in the corporate world for a long time before this.  I had always wanted to go back to making food.  I always loved it.”

“Yeah?” I said

“Yeah.  I was an event planner, doing work for a big company.  I always wanted to go back to baking.  My wife was really supportive, and told me to just do it.” 

“That is fantastic.” I told her, smiling.  It is always a pleasure to hear of people doing what they love. 









“Can I take your picture?” I asked her.

She sighed.

“Ok” She said “I guess so.”

“Are you sure?” I asked.

“Yeah, I need to get used to it.  Working in the spotlight is new to me.” 

She slid the liquid chocolate into a bowl.  When the chocolate was back in a machine to keep it from solidifying she came back to the marble, and scraped off what was hardened on the counter.  The coils of chocolate seemed light, elegant, sweet. 





















“I’m lucky.  My wife makes good money, so I could stop working in corporate.  She is really supportive.” She said. 

She turned to a coworker, and spoke quietly for a moment.  

“I have to give her a break.” She said, motioning at her coworker. 

“Great. Thanks for the stories.” I said. 

She walked back to the counter and stacked some plastic forms for the truffles.  She rolled her blue working gloves off, and walked away.
